Italian Inspired Tomato Soup

Ingredients
- 1 large onion finely chopped
- 4 large cloves of garlic thinly sliced
- 2 tbsp olive oil extra virgin
- 2 tins chopped tomatoes preferably organic
- 1 tbsp oregano chopped up
- 2 large carrots grated
- 1 litre home made broth vegetarian or bone broth
- 3 handfuls red lentils
- 1 tin coconut cream
- 3 tbsp parsley chopped finely
- salt and pepper to taste
Instructions
- Gently sauté onion and garlic with olive oil, add carrots and cook gently or further 10 minutes
- Add chopped tomatoes some salt and pepper, cover and gently simmer for about 40 minutes
- Add lentils, broth and oregano and again simmer for about 20 minutes until the lentils are soft
- Add coconut cream
- Throw in the parsley and season with some more salt and pepper if needed
