Italian Inspired Tomato Soup

Ingredients

large
onion
finely chopped

cloves of garlic
thinly sliced

tbsp
olive oil
extra virgin
2
tins
chopped tomatoes
preferably organic
1
tbsp
oregano
chopped up
2
large
carrots
grated
1
litre
home made broth
vegetarian or bone broth
3
handfuls
red lentils
1
tin
coconut cream
3
tbsp
parsley
chopped finely
salt and pepper
to taste
Instructions
Gently sauté onion and garlic with olive oil, add carrots and cook gently or further 10 minutes
Add chopped tomatoes some salt and pepper, cover and gently simmer for about 40 minutes
Add lentils, broth and oregano and again simmer for about 20 minutes until the lentils are soft
Add coconut cream
Throw in the parsley and season with some more salt and pepper if needed
Sprinkle with toasted pumpkin seeds and......
