Italian Inspired Tomato Soup

Ingredients
  

  • 1 large onion finely chopped
  • 4 large cloves of garlic thinly sliced
  • 2 tbsp olive oil extra virgin
  • 2 tins chopped tomatoes preferably organic
  • 1 tbsp oregano chopped up
  • 2 large carrots grated
  • 1 litre home made broth vegetarian or bone broth
  • 3 handfuls red lentils
  • 1 tin coconut cream
  • 3 tbsp parsley chopped finely
  • salt and pepper to taste

Instructions
 

  • Gently sauté onion and garlic with olive oil, add carrots and cook gently or further 10 minutes
  • Add chopped tomatoes some salt and pepper, cover and gently simmer for about 40 minutes
  • Add lentils, broth and oregano and again simmer for about 20 minutes until the lentils are soft
  • Add coconut cream
  • Throw in the parsley and season with some more salt and pepper if needed
