Garlicky Smoked Chicken Salad
Fantastic for parties, lunches or post workout treat

- 1 bag baby spinach shredded
- 1 handful rocket
- 1 red onion medium, sliced
- 100 g sun-blushed tomatoes
- 200 g smoked chicken chopped
- 4 tbsp homemade aioli
To assemble the salad, throw the shredded spinach and rocket on a platter with sun-blushed tomatoes and onion slices evenly over the top.
Spread the chicken pieces over the whole area and drizzle all over with aioli
Substitute chicken for smoked trout smoked tofu for a vegetarian or vegan option.
To make your own dressing mix together:
4tbsp of mayo (or vegan mayo)
1 garlic clove - crushed
some lemon juice
pepper
