Kale and Spinach Patties

Ingredients
  

  • 2 cups kale and spinach leaves roughly chopped up
  • 1 cup chickpea flour
  • 1 cup lukewarm water filtered
  • 8 tbsp mixed fresh herbs mint, dill, parsley, coriander, tarragon
  • 3 stalks spring onions
  • 1 tsp himalayan salt
  • 2 tbsp olive oil extra virgin
  • 1 whole lemon zest and juice

Instructions
 

  • In a food processor or a Thermomix chop up the greens
  • Add the rest of the ingredients
  • Mix well
  • Let it sit for 10 minutes
  • Fry little patties in a bit of coconut oil
  • Serve with homemade aioli (made with coconut or greek yoghurt) or any other condiment of your choice
