Mango Salad

Goes very well with fish or meat

Ingredients
  

  • 1 mango diced
  • 1/2 red pepper diced
  • 1 cup cherry tomatoes halved
  • 1 handful coriander leaves chopped
  • 1 large shallot finely chopped
  • juice of half a lime
  • 1 tbsp white balsamic vinegar
  • 3 tbsp olive oil

Instructions
 

  • Just throw everything together and enjoy! 😊

Notes

You can add some freshly chopped up red chilli if you're like me and love a bit of spice 😄
